Will a major in Chemistry allow me to follow these career paths?

Chemistry is the best major for polymer chemistry. Pharmaceutical work like you describe could be either biochemistry or chemistry, but grad school would be required. Grad school is recommended for polymer chem, too. There is no shortage of employment for physical science majors.
